Once got some (not alive) eels and read that the guidance was to nail it to board to skin. Figured I could manage without that step, I was wrong…. was like 15 years ago, but believe maybe I started grilling them just to try to crisp the thing and tried to peel that. It ended up ok but not worth the effort given my lack of skill.
